Rich Chocolate Cupcake & Nutella Frosting

As promised, here is the recipe for the cupcake. I have made this as a birthday cupcake. It's not very colourful because the birthday boy is not a kid anymore. I will definitely play it up with colourful sprinkles, jelly beans or gummy bears, etc if it's for a child's birthday. Without the candles, I think it will be just nice to serve with morning coffee or as dessert. 

For the cupcakes, the recipe was inspired from the book Cupcake Magic. I played around with the recipe. I added melted chocolate. Hence, making it a rich chocolate cake. This recipe here will make 6 cupcakes. Double up the ingredients if you need to make more.

For cupcakes
 42 g self-raising flour
55g caster sugar
55g unsalted butter or margarine
50g plain chocolate, melted
2 tablespoons cocoa powder
1 large egg
1/2 teaspoon baking powder
1 tablespoon milk

Pre-heat oven to 170C. Prepare your muffin pan with baking paper cups. Beat all ingredients together until light and fluffy. Divide evenly into prepared pan. Bake for 20 minutes or until firm and springy to the touch. Easy!

The book suggested that you can just spread Nutella on the cupcake. I was feeling adventurous and wanted to make the Nutella frosting extra special. Also because I wanted to pipe it nicely onto the cupcake. Hence a different recipe. So, I was inspired by the Classic Chocolate Frosting from the book Cupcakes & Muffins. Instead of using melted chocolate, I replaced it with Nutella.

Nutella frosting
90g unsalted butter, softened
1 teaspoon vanilla extract
125g Nutella (or more if you want)
2 cups icing sugar (or a cup if you want it less sweet)
1 - 2 tablespoons milk

Put everything in a bowl and just start with 1 tablespoon of milk. Beat everything until light and fluffy. If the mixture is still stiff, add more milk. I've only used 1 tablespoon and the consistency was perfect for piping.
